WINEMAKING
Vineyard selection. Manual harvesting using 200-kilo crates. Fermentation in wooden barrels, with grapes separated by variety and vineyard origin, using native yeasts, and no temperature control. Once alcoholic fermentation is complete, maceration time varies and can last up to two or three weeks, depending on the variety and vineyard plot. Malolactic fermentation takes place in new French oak barrels from the Allier and Tronçais departments, followed by 16 to 18 months of barrel aging, again depending on the grape variety. After this period, the final blend of the wine is created. Before bottling, it is lightly fortified with fresh egg white.
TASTING
The 2021 vintage in Rioja, and especially in Rioja Alta, was characterized by more favorable weather conditions compared to recent years. This resulted in very well-balanced red wines with pronounced varietal expression. This is a wine with a medium to high body and an intense red color, indicating its youth. Intense aromas with a clear presence of ripe fruit, as well as hints of strawberry and blackberry. These are complemented by the notes from aging in high-quality French oak barrels, which impart elegant roasted aromas, coffee, and chocolate.
On the palate, it is a soft, well-structured wine with the same fruit notes and nuances of aging that were present on the nose. Acidity and alcohol are perfectly balanced, giving the wine a harmonious sensation as it glides through the mouth. The tannins are soft and elegant, contributing to a pleasantly silky feel.
The finish is long and lingering, leaving a feeling of satisfaction that underlines the outstanding quality of this vintage.
DINNER PAIRING
You can enjoy this wine with red meat that has been marinated for a while, with game, or, if that's not possible, on its own. We also recommend it as an accompaniment to grilled white fish.
