FLOOR
This wine is made from selected vines from Alto Najerilla and the highlands of the Valle del Oja, where the semi-continental climate and the calcareous and iron-rich clay soils lend freshness and complexity to the Garnacha grapes. The low-yielding bush vines, between 70 and 90 years old, grow on slopes and are cultivated using sustainable viticultural methods. These conditions extend the ripening process and allow for the production of a rosé wine with great complexity and aromatic intensity.
WINEMAKING
After careful monitoring of ripening, the ideal harvest time is chosen to preserve acidity and a fresh fruit profile. The grapes are hand-picked and transported to the winery in small crates via refrigerated transport to maintain their full aromatic potential. Following a brief maceration in the press, during which the must remains in contact with the skins, 50% of the first must is simply drawn off by gravity; this is known as free-run juice or flor juice. The wine then ferments at low temperatures in small oak barrels, separately for each vineyard plot. Once fermentation is complete, the wine is left on its fine lees for at least four months. Twice a week, it is stirred (to keep the lees suspended) to naturally protect the wine, preserve its aromas, and add body to the mouthfeel. After this process, the wine is tasted plot by plot to determine the final blend.
TASTING
A brilliant, pale pink color. On the nose, it displays great complexity and intensity, revealing aromas of stone fruit (peach, apricot), some red berries, notes of white flowers, and citrus fruits. These are all typical aromas of the Garnacha Tinta grape. On a more subtle level, spicy nuances (vanilla, cinnamon) emerge, resulting from the winemaking process and aging in small oak barrels. On the palate, it is fresh and balanced, with pronounced acidity that lends it length and vibrancy. The fruit notes, particularly apricot, reappear on the palate. The finish is very long and fresh, and the very soft tannins provide structure, making it a highly enjoyable wine for food.
