Intense fruity notes of freshly cut grass and olive leaf. On the palate, a bitter, progressive, and persistent spiciness with hints of green almond, apple, and banana peel. Complex and balanced.
100% Hojiblanca. This olive variety can be used either for table olives or for oil production. It is undoubtedly best adapted to calcareous soils and dry conditions.
It is ideally suited for a wide variety of dishes, such as soft salads, marinated meat, oily fish, meat and fish carpaccios, intense emulsions, vinaigrettes, hot and cold creams, pasta, stir-fries, canned vegetables...
Recommended use: Eat directly; no prior culinary preparation is required. Store in a cool, dry place. Protect from direct sunlight.
