Description

A modern Bolgheri: fresh, juicy and extremely versatile.

Bolgheri Rosso DOC Le Pievi, made from grapes grown in the vineyard of the same name, is fermented and aged in 50-hl tanks of unlined concrete. Concrete has the properties of a material that Fabio Motta describes as “transparent”: during vinification it preserves the primary aromas of the grape, which bring out fruity and floral notes – precisely the characteristics that set Le Pievi apart.

Winemaking and ageing

The fully ripe grapes are fermented exclusively in concrete tanks, with the cap punched down by hand throughout fermentation, which lasts about two weeks depending on the variety. After racking and malolactic fermentation, the wines are blended before the end of the year and then returned to unlined concrete tanks to mature. This is followed by bottling and at least six months of bottle ageing.
