Elaboration

The grapes are harvested by hand and transported to the winery in refrigerated 200 kg crates in a refrigerated truck. After a light maceration of the skins with the must in the press, it is fermented in wooden casks and new French oak barrels from the Nevers area with a light toasting. Once alcoholic fermentation is complete, the wine remains in the barrels for three months, during which two battonagges (lees changes) are made per week to keep the fine lees in contact with the wine, protect it from oxygen, and contribute to smoothness and complexity on the palate.

Tasting

This straw-yellow wine has a surprisingly intense bouquet with floral aromas (white flowers, jasmine) as well as notes of citrus and apple peel. Complex and seductive.

The initial taste on the palate is very smooth with a feeling of maturity. Its minerality and freshness are evident in the mouth, developing into a toasty and lively finish, which also makes this wine a good accompaniment to a meal.

Perfect combination with grilled fish, seafood and rice, among other things.
