Appellation: DOC Isonzo del Friuli.
Grape variety: 100 % Sauvignon Blanc (70 % French clones – 30 % Italian clones).
Average vine age: 28 years.
Training system: Guyot.
Yield: 48 t/ha.
Vinification: Hand-harvesting and selection of grapes, cold maceration overnight, gentle pressing of whole grapes, static decanting of the must at 10–12 °C.
Aging: After alcoholic fermentation at a controlled temperature, the wine remains in steel tanks in contact with the fermentation lees for an extended period.
Color: Straw yellow with greenish reflections.
Bouquet: Characteristic aromas of tomato leaf, sage, and elderberries are preceded by nuances of tropical fruits and citrus. Palate: Soft and aromatic on the palate, with a pleasant acidity on the finish that invites another sip. Food pairing: Sauvignon pairs perfectly with creamy appetizers and vegetable soups as well as with cooked or roasted seafood. Try it with maltagliati pasta, San Daniele ham, and zucchini.
