Vinification: Manual harvest and selection of the grapes, cold maceration overnight, gentle pressing of the whole clusters, static decanting of the must at 10–12 °C.
Aging: After alcoholic fermentation at a controlled temperature, the wine remains in steel tanks in contact with the fermentation lees for an extended period.
Color: Remarkably bright yellow with copper hues.
Bouquet: Complex aromas, characterized by a fruity start reminiscent of golden apples and sweet citrus fruits. Notes of wildflowers.
Palate: A mineral tone opens into a full-bodied, refined palate, characterized by pleasant acidity and a savory finish. Balanced with remarkable persistence.
Food pairing: Pairs excellently with appetizers, especially cold cuts. Also goes well with spaghetti with cuttlefish ink.
